RAM Restaurant and Brewery July 23, 2015 Industry News Summer Salute Menu Available Now at The RAM The RAM Restaurant and Brewery recently added several new tasty selections with the debut of their annual Summer Salute menu. Available now and for a limited time, the new summer menu features are loaded with fresh ingredients and exciting flavors! Since its recent introduction, a guest favorite has been the Ahi Tuna Melt sandwich featuring house-made Ahi Tuna salad on thick- cut bread with grilled avocado, arugula, peppered bacon and Wisconsin Havarti Cheese all grilled to perfection. For starters, hungry guests are quickly satisfied with Wisconsin Crispy Cheese Curds served with a trio of dipping sauces including Sriracha Aioli, Stone Ground Mustard Aioli and Roma Tomato Jam. “Sriracha is a popular flavor trend now and our guests will enjoy the great contrast of flavors between these all made fresh and in house sauces, ” said James P. Cassidy, Culinary Director for The RAM. Another popular appetizer served with the trio of sauces is the Tempura Fried Green Beans accompanied with Sweet Chili Vinaigrette, Rosette Sauce and Roma Tomato Jam. “The Roma Tomato Jam is a signature sauce of ours and is represented in other selections on our everyday menu. It is definitely a guest favorite,” added Cassidy. The Chicken Fried Halibut Tacos are another guest hit! Buttermilk dipped and battered Pacific Halibut fillets are cooked golden and served on a white corn tortilla with roasted jalapeno-mustard slaw, house- made avocado salsa and finished with fresh cilantro. They are complemented with Spanish red rice and black beans. Crunchy and cooked to perfection, these halibut tacos are the perfect summertime choice for lunch or dinner! Other Summer Salute favorites include The Baja Shrimp Wrap, featuring in- house brewed Buttface Amber Ale lime cilantro marinated shrimp. Wrapped in a spinach tortilla with diced avocado, fresh red bell pepper, jicama and green leaf lettuce, served with a fresh fruit K-bob featuring sweet California Strawberries. The BBQ Pork Flatiron Steak marinated in house BBQ and A-1 Sauce for 24 hours is expertly grilled and served with gorgonzola-jalapeno hush puppies, pork belly roasted corn and BBQ seasoned fries. Chef Cassidy said, “The Flatiron Steak is remarkable and our guests really enjoy this selection.” For those with a sweet tooth, new desserts include Fresh Berries Devonshire with house-made Devonshire cream and shaved chocolate or the Root Beer Skillet Cookie served hot out of the oven and topped with a scoop of rich vanilla ice cream. Thirsty Summer Salute guests can enjoy these great food selections with a frosty glass of Barefoot Wit Belgian White Beer brewed fresh and local from the brewery or try something new including Several Beer Cocktails featuring company beers. These new beer concoctions include a Three Olives Vodka Summer Shandy, The Coconut Blonde with 1800 Coconut Tequila, The FireFly Citrus Ale Cocktail with Buttface Amber Ale and The Angry Blonde with Angry Orchard Crip Apple and Blonde Ale.
